Ingredients for 4 people

  • A salmon fillet
  • 60 ml of Frost or more depending on the size of the fillet
  • 60g sugar
  • 115 g of salt
  • Cracked black pepper

Mayonnaise:

  • 1 egg yolk
  • 1 teaspoon of mustard
  • 250 ml of sunflower oil or light olive oil
  • 1/2 lemon
  • Chopped fresh chervil

Place a salmon fillet on a baking sheet and sprinkle it with the Frosted ice cider.

Then sprinkle it with the salt, sugar and pepper mixture to coat it on both sides.

Cover it with plastic wrap and a weight.

Put in the refrigerator.

Return it after twelve hours. After twenty four to forty eight hours, the salmon is ready.

Rinse the fish and dry well.

Serve in thin slices with a homemade mayonnaise.

Mayonnaise:
Combine egg yolk and mustard. Season with salt and pepper. Pour in the oil in a thin stream while whisking. Add the lemon juice. Flavor to taste with chervil, fresh or in a jar.
